Baked Watermelon Radish Chips

Something that has helped me tremendously throughout my weight loss journey is remembering that snacking is GOOD!

I know that when I wait too long between meals or don’t eat enough to feel full that it sets me up on a collision course for overeating.

That said, it’s still important to eat healthy foods and, as with everything, moderation is key.

Instead of buying bags of chips and other greasy (albeit delicious) noms, I decided to make some baked chips right in the comfort of my own home.

I had groceries delivered from Milk & Eggs earlier in the week and had taken a chance on watermelon radishes while they’re still in season. Truth be told, I had no idea what to do with them — I only bought them because they “look pretty” and .99 cents a piece the price is oh so right. 

Fox asked to have his photo taken with the radish, because of course he did, as well as a purple turnip that we plan to turn into chips at a later date.

It just so happened that I attended an event shortly after (I’ll be blogging about this tomorrow) that incorporated watermelon radishes into their salads and as soon as I had a bite of their delicious flavor I knew exactly what to do with them.

Spoiler alert: they don’t actually taste like watermelon 😉

Here’s how I made the baked watermelon radish chips.

Ingredients

Watermelon radish
Coconut oil (I used a spray version)
Lemon
Salt
Pepper
Chili powder

Directions

  1. Peeled the skin off like I would a potato
  2. Sliced radishes thin (a mandolin would probably make sense here, but I did it the hard way)
  3. Cover a baking sheet with coconut oil, line with sliced radishes, spray coconut oil over top as well
  4. Add lemon slices, salt, pepper, chili powder
  5. Pop in oven at 400 degrees F for 10 minutes, flip, bake another 10 minutes or until crispy

Ta-da! That’s it. Let them cool and there you have it. 

I like mine a bit undercooked, so either slice them a lot thinner than pictures or bake longer if you prefer them crispy.

Going back to Milk & Eggs for a moment, they continue to be my favorite way to shop. It’s basically a Southern California based online farmer’s market with insanely good prices that gets delivered to your door within 48 hours of ordering.
