Hey y’all! We just got home from Hawaii today and we had SO much fun! Ziplining, tubing, watching dear friends get hitched — the works.
We decided to take it easy to recuperate this Labor Day with a fun family meal, so on the way home this morning we picked up ingredients to make a yummy lunch. I decided upon Raspberry Jalapeño Chicken because I was craving both sweet and spicy!
As soon as lunch was finished cooking, we packed up and headed outside in the sun. It was packed and let me tell you, this dish turned serious heads! Someone even said, ” Do you do this for a living?!” I’ll take it.
Anyway, I want to share this recipe with you because it was so very delicious and tender with just the right amount of spice.
My family likes to serve with cream cheese (or sometimes goat cheese if we’re feeling fancy) because we’ll add an extra jalapeño to spice it up and that helps keep things cool. My absolute favorite part is that the chicken juices will mix with the jam and create this ultra juicy/savory combo that makes the meat fall apart in your mouth.
I specifically chose Foster Farms Simply Raised fresh chicken because it’s locally grown in California and the Pacific Northwest which means that the chicken I purchase for my family is delivered fresh within 48 hours or less. It’s antibiotic free with chicken that is American Humane Certified and fed a vegetarian diet, without hormones or steroids.
This is what I like to call the #newcomfortfood, which has quick, easy steps, fast prep time, and minimal ingredients in the recipe. I also try to incorporate seasonal ingredients, and since raspberries are best picked mid-summer, this was a good time to get my fill.
