I’ve lived in Los Angeles for a little over two weeks now and the one thing I’m still not over are all the food options in my area. Literally everything can be delivered (if I needed an outfit to wear out tonight it could be at my door in 1/2 hour – come on!). Although I enjoy walking to the grocery store more than I can even express, I still have a lot to do around the house. I have this app called Instacart that allows me to order groceries, and while I was browsing through the other day I noticed a salsa flavor I haven’t encountered before — mango habanero. In fairness, I’ve made mango habanero salsa before but that quickly died down once my time did, so I was pretty giddy when I saw this already made for me.
About a week later I was contacted to partner with La Victoria to create a recipe with their new mango habanero flavor and one could only assume that was fate speaking up 😉 I gathered a few other ingredients and here’s what I came up with.
Mango Habanero Stuffed Peppers

Yields: 2 stuffed peppers
- 2 bell peppers (any color)
- 1/2 lb. ground beef
- 1 c. rice
- 8 oz. La Victoria Mango Habanero Salsa
- 3 oz. Mexican cheese, shredded
- Cut tops off peppers and scoop out the insides.
- Fill pot with water on stove, adding peppers once water comes to a boil. Water must be covering peppers. Cook 5-6 mins.
- Brown beef in separate skillet.
- Stir in pre-cooked rice, salsa, and 1 oz. cheese.
- Preheat oven to 350 degrees F.
- Stuff peppers with filling and top with remaining cheese.
- Bake for 10-15 minutes at 350 degrees F.
- Cook time: 10-15 mins.
- Total time: 30 mins.
These are exceptionally easy to cook up! There’s no chopping onions or garlic and the spice is just right.
