Yesterday my hometown team donned all red for Thursday Night Football and I was ready for a homestyle tailgate. It’s been getting cooler here in San Diego (and by cool I mean high 70s), so it was absolutely perfect outside. This is by far my favorite time of year to break out the grill and enjoy some fresh Southern California air.

When I think tailgate, I think food. Some of the tastiest meals can be created outside of the kitchen, and we try to take advantage of the wonderful autumn weather every chance we get.

For our tailgate, I decided to crank the grill and put together a fresh, savory and spicy BBQ chicken pizza.

My new pizza peel provided a perfect staging and preparation area for my fresh ingredients while I seasoned the Fresh & Natural Foster Farms Chicken Thighs. Being born and raised in Buffalo, NY, I have a propensity for spicy foods and delicious sauces. Tyler has picked up on this so when I asked him to head to our local Albertsons for BBQ sauce to baste the chicken and coat the pizza, he knew to go straight for Stubb’s Legendary Bar-B-Q’s Sweet Heat flavor. Because all Stubb’s sauces never use artificial preservatives, colors, sweeteners, flavorings or MSG, it gave our grilled chicken authentic, legendary Texas flavor.

Tyler takes any chance he gets to practice his grilling skills. Luckily, with the forgiving Foster Farms Chicken Thighs, he was able to grill tasty BBQ chicken no problem.

If you’re interested in trying this unbelievably yummy pizza at your next tailgating party, here’s the recipe:

Grilled BBQ Chicken Pizza

Ingredients

1 package Foster Farms Chicken Thighs
1 bottle Stubb’s BBQ Sauce
1/2 red onion
1 package shredded mozzarella
1 block smoked Gouda cheese
1 package dry pizza dough mix (or 1 container refrigerated pre-made dough)
Cilantro
Olive Oil
 

Instructions

1. Work and knead dough into shape of pizza, brush with olive oil and set aside.
2. Season chicken with salt and pepper and generously coat with BBQ sauce.
3. Grill chicken for 6-8 minutes per side. BBQ sauce can be added during grilling.
4. Make sure internal temp of chicken reaches 180 degrees F.
5. Remove from grill and set aside.
6. Place pizza dough top-down on grill for 2-3 minutes, remove from grill.
7. Cut onion into thin rings
8. Pull apart or shred chicken and thinly slice or shave Gouda cheese.
9. Coat top of pizza with (in order) BBQ sauce, gouda, chicken, onions, and top with mozzarella and cilantro.
10. Place pizza back on grill for 10-12 minutes or until top layer of cheese is melted and crust is golden brown.
