Fox has always been a good eater but lately he’s seemed pretty bored with his options. Most of the quick and easy meals I’ve come up with the food him aren’t always the healthiest and I’ve been wanting to change that. Now that Charlie is eating the same foods that the rest of the family eats, I’ve been on a mission to create recipes that are better for them with new flavor combos.
I had given Charlie a quesadilla one day and, even though he loved it, his tummy seemed a bit off later in the day. It seemed like he couldn’t process flour tortillas that well yet. When I looked for an alternative I found out that CAULIPOWER, the same brand that makes delicious cauliflower crust pizzas, carries both Original and Grain Free flavors.
The thing I love most about CAULIPOWER Cauliflower Tortillas: the very first ingredient listed is cauliflower! These tortillas are naturally gluten, wheat, and preservative-free, as well as vegan, non-GMO, and dairy-free.
We have made many different styles of quesadillas using CAULIPOWER Cauliflower Tortillas. From Buffalo chicken to potstickers, the opportunities are endless!
This time around I made Caprese Quesadillas.
You need just 4 ingredients: CAULIPOWER Cauliflower Tortillas, pesto, tomato, and fresh mozzarella cheese. Basil is optional as a garnish if you feel like getting fancy! It takes minutes to heat the tortillas in your microwave or skillet, then melt the remaining ingredients in between your two layers.
That’s it! It’s that easy.
As soon as Fox got done grilling me about whether or not the tomatoes were actually red peppers, he ate a full quesadilla! Both kids loved them and I felt good about serving them these ingredients.
In addition to quesadillas, you can use this yummy product to create burritos, tacos, wraps, and more. They have fewer calories, less fat, more fiber, and vitamin C than alternatives. In fact, the CAULIPOWER Grain-Free Cauliflower Tortillas feature chickpea flour with 7 grams of protein and only 8 net carbs per tortilla.
You can find CAULIPOWER Cauliflower Tortillas in the refrigerated or freezer aisle at your local grocer. Get $2 off when you click here!
