I came across a giant organic papaya when I was placing my order to Milk & Eggs last week and I had to put it in my cart. I knew it would make the most incredible breakfast, but I wasn’t quite sure which direction I would go. Originally I thought about adding honey and granola (which I still think would be delicious), but I decided to make it Fox friendly and add a bunch of berries.
All day this kid asks me for “terries.” He has a little hand motion to go with the request that looks like a mix of crab claws and jazz hands — it is just the cutest. I totally encourage this interpretive movement by buying pints on pints of raspberries, blackberries, and blueberries.
For breakfast this morning I halved the papaya, used a spoon to scoop out the seeds, and filled with a few yummy ingredients.
- Vanilla yogurt (I used almond milk yogurt)
- Assorted berries
- Bee pollen
- Chia seeds
Pour in yogurt and sprinkle remaining ingredients on top. Enjoy!
I love adding bee pollen and chia seeds to most sweet foods I make because it adds a little crunch and I prefer that texture. The health benefits make it all the better!
It was Fox’s first time trying papaya and he actually bypassed the “terries” to ask for scoops of papaya with yogurt so I think it’s a win! Plus we have another half to recreate tomorrow morning.
