We’ve been working like crazy around the house redoing a few rooms and since the thrift shops were all 1/2 off for the holiday, I spent quite a bit of time pounding the pavement to find the best deals. I’m so excited to share with you the major changes we made to the nursery, Fox’s room, and the playroom!’
In the meantime, I couldn’t keep you in the dark about this fresh recipe we concocted in the kitchen earlier today.
We made a fresh salad with a Blueberry Basil Vinaigrette! Our entire kitchen smelled like a garden.
10/10 would make again!
Blueberry Basil Vinaigrette
1/2 c blueberries
1 shallot, chopped
1/3 c white wine vinegar
5 basil leaves
1/2 tsp salt
1/2 c olive oil
1/4 c water
- Combine blueberries, shallot, vinegar, basil, salt, and water in blender.
- Add zest of whole lemon to blender.
- Quarter remaining lemon and add juice to blender.
- Pureé while slowly adding olive oil.
Drizzle over top salad of your choice. I poured over kale, blueberries, blue cheese crumbles, salted sunflower seeds, and julienned beets.
