One of the biggest struggles that I have had as a new mom is finding time. Finding time for bubble baths, reading a good book, working out, and cooking a delicious meal isn’t always easy, but the responsibility still stands to create a happy and healthy home for my family.
When Fox was born I explored the idea of delivered meal kits as it wasn’t so much finding the time to cook that was hard, but the actual act of shopping and meal planning. I always thought I’d phase out of the need for meal kits as he got older, but I need them more than ever now that he’s running around (yes running – it went from barely walking to running in under 7 days).
I was lucky enough to partner with Sun Basket, a new healthy meal kit service out of San Francisco boasting organic ingredients, to try out a few of their meals this week. The recyclable box arrived the day before my parents flew back to Buffalo and the whole experience garnered quite a few oohs and aahs! My mom was especially wowed by the organic kale and how fresh it looked after being delivered to my doorstep. (Not only is shipping free, but the materials can be shipped back for free as well to be reused!)
All Sun Basket food is organic non-GMO produce with nutritionist approved recipes which is so important to me now that Fox is eating the same meals that we are. Meal plans include paleo-friendly, gluten-free, and vegetarian options, plus breakfast, which I jumped at the chance to try!

This particular box was a three meal selection for two people, although we wound up with leftovers each time after feeding all three of us, and there were actually two breakfasts that counted as one meal!
Nothing warms my heart more than knowing I’m able to cook up a yummy meal for my family that not only tastes good but is healthy and looks beautiful on the plate! Each meal was refreshing and unique, which is key in a solid meal plan. My favorites were the breakfasts, which I already scoped out for next week (mango parsley smoothie and skillet baked eggs with chard – omg).
