Family Recipe: Homemade Chicken and Dumplings

Now that I’m living nearby to loved ones again, I’m making it my mission to track down and make all the yummy family recipes.

One of my favorite dishes my grandmother makes is homemade chicken soup with dumplings, and it’s the perfect time of year to make it.

There’s truly nothing better than cuddling up with the roaring fireplace under a knit blanket while slurping a cup of soup — especially when carbs are added to it!

This weekend was a busy one for us, so while I began to paint our living room, my husband took a crack at Mammies’ famous chicken and dumpling recipe.

It came out SO GOOD!

I was totally impressed. Here’s the recipe:

Chicken and Dumplings

Ingredients

2 qt water
2.5 Tbsp Better Than Bouillon Roasted Chicken Base
3/4 lb chicken breast, sliced into strips
4 carrots, sliced
1.5 onion (small), sliced
2 celery, sliced
1 c pancake mix
3/4 c milk
Flour
Salt and pepper, to taste

Directions

  1. Put water in stock pot, adding chicken once boiling. Cook 10-15 minutes.
  2. Clean up surface of pot using skimmer.
  3. Add Better Than Bouillon to pot along with carrots, onion, and celery. Cook 40 minutes.
  4. In the meantime, mix pancake mix and milk to create meatball-sized dumplings. Coat with light dusting of flour.
  5. Dump into soup for 10 minutes uncovered, then 10 minutes covered.
  6. Add salt and pepper to taste.

After using the roasted chicken base, my husband is excited to see what he can do with the other flavors whether it be in a chili, stir fry, or stew because these bases can be used as both basic stock broths or marinades.

Admittedly, we don’t cook large meals as much as we’d like to which means that liquid stock goes bad after opening when we don’t use it fast enough. With that in mind as well as not having to worry about gritty, undissolved cubes, we prefer to use Better Than Bouillon in our recipes.
